Moonshine Made for the Seasons
At Regeneration Distilling Co., head distiller Zach Pasley crafts moonshine the way the seasons feel. As the weather turns cool and the holidays approach, he reaches for his longtime favorite: Apple Pie Moonshine. Spring brings fresh berries and lighter flavors, and year-round he leans on a signature staple — Sweet Potato Moonshine, distilled from sweet potatoes grown in Mt. Folly’s regenerative fields.
Zach has been refining his Apple Pie Moonshine recipe since high school, and it shows. Every flavor comes from real ingredients — whole apples, warm spice, and actual cinnamon sticks — layered over a base of sweet potato and grain. Nothing artificial. Nothing shortcut.
Spring is its own kind of celebration. We distill with the year’s first local strawberries, sourced from the Future Farmers of America chapter, and each batch captures that early-season brightness. We’ve even blended blackberries and raspberries into a small-run shine we called Brambleberry — a tart, rosy nod to Kentucky’s hedgerows.
